Spicy Cabbage

Ingredients

  • 1/2 heads Green Cabbage
  • 1/2 heads Purple Cabbage
  • 1 whole Purple Onion
  • 1 whole Jalapeno, 1/2 The Seeds Removed
  • 4 whole Carrots, Scrubbed
  • 1 bunch Radishes, Sliced
  • 1 bunch Cilantro, Roughly Chopped
  • 1 whole Lime, Juiced
  • 1/2 cups White Wine Vinegar
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper

Directions

    Add slicing attachment to a food processor.

    Add both cabbages, onion, jalapeno and carrots into the processor working in batches as needed.

    You will probably have to empty the bowl a few times.

    Add all of the sliced veggies to a large bowl and add in radishes and cilantro.

    Add in lime juice, vinegar, salt and pepper.

    You may need to add more vinegar, salt and/or pepper depending on your taste.

    The cabbage mixture should be pretty moist, you dont want it too dry.

    Give everything a good toss.

    Cover bowl and let this lovely combination sit in the fridge for at least 1 hour.

    Serve with blue corn tortilla chips or as a wonderful topping to tacos.
