- 1 c. grits
- 1 onion
- other vegetables (optional)
- 1 tsp. whole mustard
- 2 tsp. salt
- 1/2-inch ginger piece
- 4 tsp. cooking oil
Directions

1Pour oil in a pan.

2When heated, put mustard in; cover pan until mustard splutters.

3Decrease heat; fry onions, vegetables and ginger.

4Add 2 to 2 1/2 cups of water and bring it to a boil. Add salt.

5Simultaneously, in a different pan, fry (roast) the grits until golden brown.

6Add the grits, while stirring constantly, to the first pan.

7Cover pan and let simmer on low heat for 5 minutes.
