  • 2 unbaked pie shells
  • 2 c. shredded unpeeled apples
  • 1 c. shredded unpeeled yellow squash or zucchini
  • 1 c. shredded carrots
  • 1/2 c. chopped walnuts
  • 3 Tbsp. flour
  • 1 1/2 c. firmly packed brown sugar
  • 1/4 c. margarine, melted
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. salt
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 1 tsp. grated orange peel
  • 2 eggs, beaten

    Heat oven to 425°.

    In large bowl, combine apples, squash, carrots, nuts and flour.

    Toss to coat.

    In medium bowl, beat margarine and sugar until well blended.

    Add cinnamon, nutmeg, salt, lemon juice, vanilla, orange peel and eggs; blend well. Combine contents of both bowls; mix well.

    Spoon filling into pie shells.
