  • 1 Tbsp. olive oil
  • 1 large onion, chopped fine
  • 1 tsp. dry basil, crumbled
  • 1 bay leaf, crumbled
  • 2 cloves garlic, minced
  • 3/4 tsp. pepper
  • 1/2 boned chicken breast, chopped fine
  • 1 can tomatoes, chopped with juice
  • 2 Tbsp. tomato paste
  • 8 lasagna noodles
  • 1/2 c. Parmesan cheese, grated
  • 1 c. part-skim Ricotta cheese
  • 1/2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1/4 tsp. ground nutmeg or mace
  • 1/4 tsp. cream of tartar

Directions

    Heat oil in skillet. Add onion, basil, bay leaf, 1/2 of garlic and pepper. Cook uncovered until onion is soft, about 5 minutes. Remove 2 tablespoons of mixture and set aside. Add chopped chicken. Stir for 3 minutes. Reduce heat. Add tomatoes and tomato paste. Cook uncovered 20 minutes. Stir occasionally.
