Spicy Marinated Mushrooms

Ingredients

  • 1 lb. fresh, firm, small mushrooms (button)
  • 3/4 c. wine vinegar
  • 1/4 c. water
  • 1/2 c. olive oil
  • 1 bay leaf, broken
  • 1 tsp. fennel seed, crushed
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 large garlic cloves, minced
  • 1/2 tsp. sugar
  • 1 Tbsp. lemon juice
  • 1 or 2 whole small Hawaiian red peppers (optional)
  • parsley

Directions

    Wipe mushrooms clean.

    Combine all other ingredients except garlic and parsley.

    Boil for 5 minutes.

    Pour over mushrooms and add the garlic.

    Stir well to combine and coat.

    Place the marinating mushrooms in a container with tight lid.

    Chill for at least 12 hours, shaking or stirring if your lid isn't tight enough.

    The longer they marinate the better but serve within 4 to 6 days.
