  • 2 c. red chile puree (from 24 dried pods)
  • 3 lb. lean pork
  • 1 Tbsp. salt
  • 1 Tbsp. oregano
  • 1 tsp. pepper
  • 2 cloves garlic, mashed

Directions

    Cut pork into strips.

    Mix all other ingredients and add pork strips; let stand in cool place for 24 hours.

    Cut as much meat as needed for 1 meal into cubes and brown in oil.

    Add chile sauce and simmer 1 hour.

    This meat can be dried and used later.
