- 4 c. rice
- 2 cans Ro-Tel tomatoes (with chilies)
- 1/2 c. butter
- 4 c. chicken broth
- 4 cloves garlic
- 2 large onions
- 1 c. peas
Directions

1Soak rice in hot water for 15 minutes.

2Rinse in colander and let drain.

3Saute rice in butter until golden.

4Puree tomatoes, onions and garlic in blender with chicken stock.

5Combine all ingredients.

6Bring to a boil, then simmer until the liquid is absorbed.

7Add peas.

8Simmer 15 minutes.
