Spicy Rice

Ingredients

  • 8 oz. bacon
  • 3/4 c. long grain rice
  • 1 1/2 c. water
  • 1 medium onion, chopped
  • 1/2 c. celery, sliced thin
  • 1/2 c. carrots, sliced thin
  • 1/2 c. frozen peas
  • 2 Tbsp. margarine
  • cayenne pepper to taste
  • seasoned pepper to taste
  • garlic salt to taste
  • salt to taste

Directions

    Cook bacon until crisp, drain, crumble and set aside.

    Cook rice in water according to package directions and set aside. Saute onion, celery and carrots in margarine until tender but firm.

    Add peas and saute two additional minutes.

    Add rice, bacon and seasonings and stir over medium heat two to three minutes. Add small amount of water if needed to moisten.

    Serves 4.
