Spicy Tofu

Ingredients
- 2 12-oz. pkg. extra-firm tofu, drained and patted dry, cut into 1/4-inch cubes
- 3 Tbs. low-sodium soy sauce
- 2 Tbs. sriracha
- 2 Tbs. seasoned rice vinegar
- 1 Tbs. maple syrup
- 2 tsp. toasted sesame oil
- 4 green onions, thinly sliced ( 1/2 cup)
- 2 Tbs. vegan mayonnaise
Directions

1Heat nonstick skillet over medium-high heat, and add half of tofu cubes.

2Cook 10 to 12 minutes, or until cubes are golden, stirring occasionally.

3Transfer tofu to plate, and repeat with remaining tofu.

4Stir together soy sauce, sriracha, vinegar, maple syrup, sesame oil, and 2 Tbs.

5water in small bowl.

6Return all tofu to pan, and add soy sauce mixture.

7Bring to a simmer, and cook 2 to 3 minutes, or until most of liquid is absorbed.

8Remove from heat, and stir in green onions and mayonnaise.

9Serve warm or chilled.
