- 1 carrot
- 2 medium potatoes
- 1/2 c. peas
- 1 bell pepper
- 1 medium onion
- 1/4 head cauliflower
- 2 Tbsp. oil
- 1/4 tsp. cumin seed
- 1/4 tsp. turmeric
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/4 tsp. curry powder
Directions

1Chop vegetables in bite-size pieces.

2Place oil, cumin seed and onion in frypan.

3Cook until onion is tender.

4Add remaining ingredients and cook over medium heat in covered pan until fork-tender (approximately 20 minutes).

5May need to add some water if needed occasionally.
