  • 1/2 (10 oz.) can tomatoes
  • 1 carrot
  • 2 medium potatoes
  • 1/2 c. peas
  • 1 bell pepper
  • 1 medium onion
  • 1/4 head cauliflower
  • 2 Tbsp. oil
  • 1/4 tsp. cumin seed
  • 1/4 tsp. turmeric
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. curry powder

Directions

    Chop vegetables in bite-size pieces.

    Place oil, cumin seed and onion in frypan.

    Cook until onion is tender.

    Add remaining ingredients and cook over medium heat in covered pan until fork-tender (approximately 20 minutes).

    May need to add some water if needed occasionally.
