- 2 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
- 2 c. herb stuffing mix, crushed
- 1 c. firmly packed, freshly grated Parmesan cheese (5 oz. wedge)
- 1/2 c. green onions, finely chopped
- 3 Heritage eggs
- dash of nutmeg
- mustard sauce
Directions

1Combine all ingredients except sauce in large bowl and mix well.

2Shape into 1-inch balls.

3Cover and refrigerate or freeze until ready to bake.

4Preheat oven to 350°.

5Set spinach balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.

6Serve with mustard sauce.

7Can be served hot or at room temperature.
