Spinach Biryani

Ingredients

  • Frozen spinach (10 - 16 oz, it's flexible)
  • One medium onion, chopped
  • 3 eggs
  • Salt, to taste
  • Cinnamon, to taste (about 1/2 tsp.)
  • Tumeric, to taste (about 1/4 tsp.)

Directions

    Over medium heat in a large skillet, saute the onion (sliced) until soft

    and golden.

    Add spinach (better thawed but that's not necessary).

    Cook till spinach is pretty dried out.

    Then add eggs one at a time - just crack them into the pan and stir them in with a wooden spoon. After each one is cooked, add the next.

    Once done with the eggs, add salt, pepper cinnamon and tumeric.

    Voila!
