  • 2 boxes Jiffy cornmeal mix
  • 1 stick butter, melted
  • 1 onion, chopped
  • 1 (10 oz.) carton cottage cheese
  • 4 eggs
  • 1 (10 oz.) pkg. chopped frozen spinach, thawed and drained
  • 1 c. cheddar cheese

Directions

    Mix all ingredients together.

    Pour into greased 9x13 pan. Bake at 375° for 30 minutes till golden brown.

    Serves 12.
