- 1 stick butter
- 2 pkg. frozen spinach, thawed
- 1 (16 oz.) carton Ricotta cheese
- 1 lb. medium sharp Cheddar cheese, grated
- 4 eggs
- 6 Tbsp. flour
- 1 tsp. minced onion flakes
- salt and pepper to taste
Directions

1Cook the spinach with butter for about 5 minutes.

2Blend eggs and flour with mixer; add cheeses.

3Stir in remaining ingredients. Pour in greased baking dish.

4Bake at 350° for 45 minutes.
