Spinach Casserole

  • 3 pkg. frozen chopped spinach, well drained
  • 1 large onion, chopped
  • 1/2 c. butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 clove garlic, minced
  • 1 1/4 c. shredded Cheddar cheese
  • 1 c. shredded Mozzarella cheese
  • 1 egg, well beaten
  • 1 c. fine bread crumbs

Directions

    Preheat oven to 375°.

    While spinach is draining, saute onion in butter.

    Add spinach, salt, pepper and garlic.

    Spoon half of spinach mixture into 9-inch pan.

    Spread Cheddar cheese and half of Mozzarella cheese and cover with remaining spinach.

    Spoon egg evenly over top.

    Sprinkle rest of Mozzarella cheese and then bread crumbs.

    Bake until spinach is piping hot and cheeses have melted, for 30 to 40 minutes.
