Squash Casserole

Ingredients

  • 3 lb. yellow squash
  • 1/2 c. cracker meal
  • 1 stick margarine
  • 1 tsp. salt
  • 1/2 c. chopped onion
  • 2 eggs
  • 1 Tbsp. sugar
  • 1/2 tsp. pepper

Directions

    Cut squash and boil until tender. Drain, then mash. Add all ingredients except 1/2 of the margarine to squash.

    Melt remaining margarine.

    Put squash into baking dish.

    Pour remaining margarine over squash and sprinkle with additional cracker meal.

    Bake at 375° for 1 hour.
