  • 1/4 c. onion, finely chopped
  • 2 pkg. chopped spinach
  • 1/2 c. Parmesan cheese
  • 4 oz. Monterey Jack cheese
  • 1 (12 oz.) carton cottage cheese
  • 1/2 tsp. salt
  • 2 cloves garlic, crushed
  • 2 eggs

Directions

    Heat oven to 375°.

    Grease casserole dish.

    Mix first 4 ingredients together.

    Beat 20 strokes and spread in dish.

    Mix remaining ingredients and spoon over batter.

    Bake until set, about 30 to 40 minutes.
