- 6 medium potatoes
- salt and pepper
- sour cream
- guacamole
- chopped green onions
- melted butter or margarine
- grated cheese
- picante sauce
- jalapeno slices
- crumbled bits of bacon
Directions

1Wash and scrub skins of medium sized potatoes.

2Bake in oven or microwave until tender but not mushy.

3Quarter each potato, cutting lengthwise, then carefully remove all but about 1/4-inch of the potato, leaving the skin intact.

4Place skins on baking tray or cookie sheet.

5Brush skins with melted margarine; sprinkle with salt and pepper.

6Bake in oven at 450° for 15 to 20 minutes. Sprinkle with grated Cheddar cheese.

7Return skins to oven until cheese melts.
