- 1 pkg. frozen chopped spinach, thawed and drained (do not cook)
- 1/2 c. Parmesan or Romano cheese
- 2 lb. Ricotta cheese
- 3 eggs
- 1/8 tsp. pepper
- 1/2 tsp. salt
- 8-inch pie crust, partially cooked at 375~ for 10 minutes
Directions

1Preheat oven to 350°.

2Combine all ingredients and pour into partially-cooked pie shell.

3Bake 45 to 60 minutes, until center is set.

4Serve hot or cold.
