- 1 c. fat-free cottage cheese
- 2 pkg. dry vegetable soup mix
- 1 (8 oz.) can sliced water chestnuts
- 1 (10 oz.) box chopped spinach
- 1 c. fat-free mayonnaise
Directions

1Thaw spinach, if frozen.

2Drain and chop water chestnuts. Puree cottage cheese in food processor or beat very well.

3Squeeze all the moisture from thawed spinach.

4Mix all ingredients in large bowl.

5Chill minutes up to overnight.

6Serve with fat free crackers or in a bread bowl.

7Yields 8 servings (1/4 cup each). Has 80 calories, less than 1 gram of fat per serving.
