- 1 (10 oz.) pkg. frozen spinach, thawed and drained
- 1 pkg. Knorr vegetable or leek soup mix
- 1 pt. sour cream
- 1 c. mayonnaise
- 1 1/2 Tbsp. Parmesan cheese
- 1 small onion, chopped or 1 tsp. minced onion

1Procedure:

2Wash tomatoes.

3Remove stems and trim off bruised or discolored portions.

4To prevent juice from separating, quickly cut about 1 pound of fruit into quarters and put directly into a saucepan.

5Heat immediately to boiling while crushing.

6Continue to slowly add and crush freshly cut tomato quarters.

7Make sure the mixture boils constantly and vigorously while you add the remaining tomatoes.

8Simmer five minutes after you add all pieces.
