Spinach Dip

  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1 c. fat free mayonnaise
  • 1 c. nonfat yogurt
  • 1 (8 oz.) can water chestnuts, drained and minced
  • 1/2 c. finely chopped onion
  • 1/4 c. grated Parmesan cheese
  • 1/2 tsp. ground pepper
  • 1 round loaf country bread (Flintstone)

Directions

    Drain spinach in a fine sieve, pressing to squeeze out as much water as possible.

    Transfer drained spinach to a medium bowl. Add remaining ingredients except bread.

    Slice about 2 inches off top of bread.

    Hollow out loaf, leaving a 1-inch wall to create a bowl.

    To serve, spoon dip into bread bowl.
