Spinach Gnocchi

  • 1 (6 ounce) package frozen spinach
  • 1 egg
  • 2 ounces chevre cheese
  • 2 ounces fresh mushrooms
  • 4 -6 tablespoons breadcrumbs
  • 3 tablespoons butter
  • 1 pinch garlic powder
  • 1 pinch marjoram
  • 1 pinch oregano
  • 1 pinch basil
  • 12 cup flour

    Thaw spinach in microwave according to package directions.

    Chop mushrooms and saute lightly in a little butter.

    Process spinach, mushrooms, cheese, and egg in a food processor until well blended.

    Add bread crumbs slowly until well incorporated.

    Make into small balls about 1- 1 1/4 inch diameter and roll in flour.

    Place in boiling water and cook until they float.

    Remove, drain, and place in a heated bowl.

    Melt butter with a pinch of each of the herbs, and pour over cooked gnocchi.

    Serve immediately.
