- 1/2 c. oil
- 1 1/2 c. grated Cheddar cheese
- 2 Tbsp. chopped onion
- 1 c. buttermilk
- 2 eggs
- 1 bell pepper, chopped
- 1/4 tsp. red pepper
Directions

1Beat eggs.

2Add milk, oil, corn, peppers, onion, cornmeal and one cup of cheese.

3Pour into a well-greased baking dish or iron skillet that is piping hot.

4Sprinkle with remaining cheese and bake at 400° for 40 minutes.
