  • 1 1/2 c. self-rising cornmeal
  • 1 (6 oz.) can cream-style corn
  • 1/2 c. oil
  • 1 1/2 c. grated Cheddar cheese
  • 2 Tbsp. chopped onion
  • 1 c. buttermilk
  • 2 eggs
  • 1 bell pepper, chopped
  • 1/4 tsp. red pepper

Directions

    Beat eggs.

    Add milk, oil, corn, peppers, onion, cornmeal and one cup of cheese.

    Pour into a well-greased baking dish or iron skillet that is piping hot.

    Sprinkle with remaining cheese and bake at 400° for 40 minutes.
