  • 4 servings instant grits
  • 1 can chicken broth
  • 1 Tbsp. dry wine
  • salt and pepper to taste
  • 1 tsp. ground red pepper
  • 1 pkg. frozen chopped spinach, prepared according to pkg. directions
  • 1 c. grated Parmesan cheese
  • 1 c. fat-free Cheddar cheese
  • 1 1/4 c. prepared barbecue sauce
  • 1 1/4 c. water
  • 2 tsp. dried thyme
  • 1 1/2 tsp. chicken bouillon
  • 1 1/3 lb. potatoes, cut in 1/4-inch slices

    In large saute pan, combine all ingredients except potatoes; bring to a boil.

    Add potatoes; cover and simmer 20 to 25 minutes until tender, stirring occasionally.
