Spinach Lasagna

  • 1 pkg. spaghetti sauce mix
  • 1 (6 oz.) can tomato paste
  • 1 (8 oz.) can tomato sauce
  • 1 3/4 c. water
  • 2 eggs, beaten
  • 1 (16 oz.) cottage cheese
  • 1/2 tsp. salt
  • 1 (10 oz.) pkg. chopped up spinach, thawed and drained
  • 1/2 c. grated Parmesan cheese
  • 1 (8 oz.) pkg. uncooked lasagna noodles
  • 1 (8 oz.) pkg. sliced Mozzarella cheese

Directions

    Combine mix, paste, sauce and water; heat until boiling. Remove from heat.

    Combine eggs, cottage cheese, salt, spinach and 1/4 cup Parmesan cheese.

    Mix well and set aside.

    Spread 1/2 cup tomato sauce mixture in greased 9 x 13-inch dish.

    Place 1/2 of noodles over sauce, 1/2 of spinach mixture and 1/2 of Mozzarella. Repeat layers until all ingredients are used.

    Sprinkle with remaining Parmesan cheese.

    Cover dish securely with aluminum foil and bake at 350° for 1 hour.

    Let stand 10 minutes before serving. Makes 8 to 10 portions.

    May be put together the night before and put in refrigerator.
