Spinach Lasagna Casserole

  • 3 hard boiled eggs
  • 2 pkg. frozen chopped spinach or 2 large bags fresh
  • 1 whole large onion chopped fine
  • 2 Tbl chopped pancetta
  • 2 cloves garlic finely chopped
  • 2 Tbl butter or oil
  • 1/4 tsp nutmeg
  • Salt and pepper
  • Freshly grated nutmeg
  • 1 container16 oz fresh ricotta
  • 2 cups of grated Italian cheeses
  • Salt and pepper and nutmeg

Directions

    Heat butter or oil in large pan ad onion and garlic and pancetta be careful not to let brown but cook on low for about 7 min ad your spinach cook until just wilted or heated through ad salt and pepper with nutmeg.

    amount of sauce in the buttered casserole dish add a single layer of lasagna noodles,top with a layer of spinach mixture,ad quartered eggs,

    another layer of noodles,then one more layer of mixture finish with a layer of noodles ad the rest of the sauce on top spread evenly finish with a generous amount of grated cheeses.

    Bake covered with foil for 25 min and uncover for 25 more min at 350
