Spinach Madeleine

  • 2 pkg. frozen leaf spinach, cooked
  • 2 Tbsp. flour
  • 2 Tbsp. butter (oleo)
  • 1 medium onion, chopped
  • 1/2 c. canned milk
  • 1/2 c. liquid from cooked spinach
  • 1 (6 oz.) roll jalapeno pepper cheese
  • 1 Tbsp. Worcestershire
  • 3/4 tsp. celery salt
  • 1/4 tsp. garlic salt

Directions

    Saute butter, onion and flour.

    Add 1/2 cup liquid and 1/2 cup milk.

    Mix together, then add cubed cheese, celery salt, garlic salt and Worcestershire.

    Mix well.

    Add drained spinach and stir. Put in casserole dish, top with crushed cracker crumbs and dot with butter.

    Preheat oven to about 400°.

    Bake until brown and crispy.
