Spinach Manicotti

Ingredients

  • 1/2 c. chopped onion
  • 1 Tbsp. butter
  • 1 lb. Ricotta or cottage cheese
  • 1/2 c. grated Parmesan cheese
  • 1 tsp. salt
  • 12 large manicotti noodles, cooked and drained
  • 1 garlic clove, minced
  • 2 (10 oz.) pkg. frozen chopped spinach, cooked and drained well
  • 4 oz. Mozzarella cheese, shredded
  • 3 beaten eggs
  • 1 Tbsp. lemon juice
  • dash of pepper
  • 2 c. spaghetti sauce

Directions

    Saute onion and garlic until tender.

    Combine all ingredients except noodles and sauce.

    Fill noodles with spinach mixture. Place in a greased 9 x 13-inch baking dish.

    Cover.

    Bake at 350° for 40 minutes.

    Heat sauce.

    Pour over noodles.

    Sprinkle with additional Parmesan cheese, if desired.
