Spinach-Orzo Pie

- 2 beaten eggs
- 3 c. cooked orzo (1 1/2 c. uncooked)
- 1 (15 oz.) jar spaghetti sauce
- 1/3 c. grated Parmesan cheese
- 1 (10 oz.) pkg. frozen chopped spinach
- 1/2 c. Ricotta cheese
- 1/4 tsp. ground nutmeg
- 1/2 c. Mozzarella cheese, shredded
Directions

1In medium bowl combine eggs, cooked orzo, 1/2 cup sauce and Parmesan cheese.

2Spread over bottom and sides of greased 9-inch pie pan to form a shell.

3Cook spinach according to package directions.

4Drain well.

5In another bowl, stir together spinach, Ricotta and nutmeg.

6Spoon into bottom of pasta shell.

7Spread remaining sauce atop filling.

8Cover edge of pasta shell with foil. Bake at 350° for 30 minutes.

9Top with Mozzarella and return to oven 3 to 5 minutes.

10Let stand 5 minutes before serving.
