Spinach Pinwheels

Ingredients

  • 1 1/2 c. light sour cream
  • 4 oz. shredded Cheddar cheese (1 c.)
  • 1/2 c. chopped ripe olives
  • 1 Tbsp. finely chopped onion
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
  • 1 can (8 oz.) water chestnuts, drained and chopped
  • 1/2 tsp. garlic powder
  • 6 flour tortillas (10 inch size)

Directions

    Mix all ingredients except tortillas.

    On each tortilla spread about 1/2 cup of the spinach mixture.

    Roll up tightly; wrap in plastic wrap.

    Refrigerate at least 2 hours or until firm.

    To serve, remove plastic wrap, cut each rolled tortilla into about 10 slices.
