Ingredients
- 2 lb. fresh spinach or 2 pkg. frozen
- 1 large onion, chopped
- 1 clove garlic, minced
- olive oil
- butter
- 2 eggs, beaten
- 1 c. Parmesan cheese
- salt and pepper to taste
Directions

1Wash the spinach carefully or defrost thoroughly.

2In large kettle, heat olive oil and saute onion and garlic for a few minutes until onion is transparent.

3Add spinach.

4Cover tightly for 2 to 3 minutes, then stir into onion.

5Grease medium sized baking dish with butter.

6When spinach has cooled slightly, stir in 2 beaten eggs and 1/2 cup Parmesan cheese.

7Season with salt and pepper and pour into baking dish.

8Sprinkle with remaining cheese over the top and dot with butter.

9Bake at 375° for 10 to 15 minutes.

10We serve this with rice on the side.
