- 2 (10 oz.) pkg. frozen chopped spinach
- 1 Tbsp. butter
- 1/4 c. all-purpose flour
- 3/4 c. milk
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/4 to 1/2 tsp. nutmeg
- 3 eggs, beaten
Directions

1Cook spinach as directed on package, but without adding water. Drain thoroughly.

2Mix batter in heavy pan; add flour, stirring constantly.

3Stir in milk gradually.

4Stir into greased 1 1/2-quart casserole.

5Place in pan of hot water and bake for 30 minutes. Serves 6 to 8.

6Serve from casserole or unmold.
