Spinach Quiche

  • 1 Tbsp. plus 1 tsp. butter
  • 1 c. onion
  • 1 small garlic clove, minced
  • 10 oz. frozen spinach, chopped and drained
  • 1 c. thawed Egg Beaters
  • 3 oz. reduced fat Swiss cheese, shredded and divided
  • tomato, thin sliced
  • dash of nutmeg and white pepper

Directions

    In a 9-inch nonstick skillet, melt butter. Add onion and garlic. Saute over medium heat until onion is softened, about 2 minutes. Add spinach and stir. Cook until moisture has evaporated, about 1 minute. Transfer to medium bowl.

    Let cool slightly. Heat oven to 350°. Add Egg Beaters, half of the cheese, nutmeg and pepper to spinach mixture; stir.

    Spray a 10-inch pie pan with Pam. Spread spinach mixture into dish. Top with tomato slices and sprinkle with remaining cheese.

    Bake until set, about 20 minutes.
