Spinach Quiche

  • 1/2 c. butter or margarine, melted
  • 10 eggs
  • 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed
  • 1 pt. (2 c.) fine cured cottage cheese
  • 1 lb. Cheddar cheese, shredded

Directions

    Place butter in a 13 x 9-inch pan in warm oven just to melt. Beat eggs in large bowl.

    Mix in flour, baking powder and salt. Squeeze thawed spinach very dry and add to egg mixture along with the melted butter and cheeses.

    Pour into pan and bake at 400° for 15 minutes.

    Reduce heat to 350° and bake an additional 35 to 40 minutes.

    Let stand for 15 minutes to set.

    Cut into 60 squares for hors d'oeuvres.
