- pastry shell
- 1 pkg. frozen chopped spinach
- 6 eggs
- 3 oz. cream cheese
- 1/2 c. almonds
- 1/4 c. sharp Cheddar cheese
- 3 green onions, finely chopped
- 3 Tbsp. parsley
- 3 Tbsp. cheese
- 1/2 tsp. salt
- dash of pepper
- 1 large tomato, cut in wedges
Directions

1Cook spinach.

2Drain.

3Combine eggs, cream cheese and Cheddar cheese.

4Stir in spinach, almonds, green onions, parsley, salt and pepper.

5Pour into shell.

6Sprinkle with 2 tablespoons Parmesan cheese.

7Bake at 425° for 15 minutes.

8Top with tomato and 1 tablespoon Parmesan cheese.

9Bake for 4 minutes more.

10Let stand 10 minutes before serving.
