- 1 pastry crust (9-inch)
- 1 c. evaporated milk
- 1 tsp. mustard
- 4 eggs
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 10 oz. frozen chopped spinach, thawed
- 3/4 c. shredded Cheddar or Swiss cheese
Directions

1Heat oven to 425°.

2Beat eggs well; add milk, mustard, nutmeg and salt.

3Mix well.

4Add spinach and cheese to mixture.

5Stir well.

6Pour into crust.

7Bake at 425° for 15 minutes.

8Reduce heat to 300°.

9Bake until knife inserted in middle comes out clean, about 40 minutes.

10Let stand 15 minutes.

11Cut and serve.
