Ingredients

  • 1 (9-inch) pie shell, unbaked
  • 2 Tbsp. butter
  • 1/2 lb. sliced bacon or ham
  • 1 c. Swiss cheese, grated
  • 1 c. Mozzarella cheese, grated
  • 4 eggs
  • 1 c. heavy cream or milk
  • 1/8 tsp. nutmeg
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1/4 c. bell pepper, chopped
  • 1/4 c. pimiento or red bell pepper, chopped
  • 1 medium onion, finely chopped
  • 1 pkg. frozen spinach, chopped

Directions

    Cook chopped spinach as per directions on package.

    In heavy skillet, cook with butter the sliced bacon or chopped ham, the onion, bell pepper and pimiento.

    Cook until crisp and golden. Drain well, then cover bottom of pie, spreading the already-sauteed ingredients.

    Put it in the oven to cook the pie crust a little.
