Spinach Ravioli

Ingredients

  • 3 doz. wonton wrappers
  • 5 oz. frozen chopped spinach, cooked and squeezed dry
  • 1/2 c. skim Ricotta cheese
  • 1/2 egg, lightly beaten (not for filling)
  • 2 Tbsp. fresh basil (or 1 1/2 Tbsp. dry)
  • 2 Tbsp. parsley
  • 2 Tbsp. Parmesan cheese
  • 1/2 tsp. garlic
  • 1/4 tsp. nutmeg
  • fresh pepper

Directions

    Place wonton wrappers under moist towel.

    Place all other ingredients, except egg, into food processor.

    Place one wonton wrapper on board, top with 1 to 2 teaspoons spinach/cheese mixture. Brush edges of wonton with egg.

    Top with another wonton and seal edges by pressing them firmly together.

    Boil for 2 minutes.

    Serve with sauce of choice.
