- 3 doz. wonton wrappers
- 5 oz. frozen chopped spinach, cooked and squeezed dry
- 1/2 c. skim Ricotta cheese
- 1/2 egg, lightly beaten (not for filling)
- 2 Tbsp. fresh basil (or 1 1/2 Tbsp. dry)
- 2 Tbsp. parsley
- 2 Tbsp. Parmesan cheese
- 1/2 tsp. garlic
- 1/4 tsp. nutmeg
- fresh pepper
Directions

1Place wonton wrappers under moist towel.

2Place all other ingredients, except egg, into food processor.

3Place one wonton wrapper on board, top with 1 to 2 teaspoons spinach/cheese mixture. Brush edges of wonton with egg.

4Top with another wonton and seal edges by pressing them firmly together.

5Boil for 2 minutes.

6Serve with sauce of choice.
