Spinach Ricotta Pie

  • 1 deep-dish pie crust
  • 2 pkg. frozen chopped spinach
  • 1 small onion, minced (1/4 c.)
  • 3 Tbsp. butter or margarine
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • dash of pepper
  • 15 oz. Ricotta
  • 1 c. half and half
  • 1/2 c. grated Parmesan cheese
  • 3 eggs, slightly beaten

    Cook spinach and drain.

    Squeeze out liquid.

    Saute onion in butter until transparent.

    Stir in spinach, salt, nutmeg and pepper.

    In a large bowl, combine Ricotta cheese, half and half, Parmesan and eggs.

    Mix thoroughly.

    Stir in spinach mixture. Pour into pastry shell.

    Bake in oven at 350° for 50 minutes, or until custard is set and top is lightly browned.
