Spinach Roll-Ups

- 1 pkg. frozen, chopped spinach
- 2 boneless, skinless chicken breast halves
- 1 can tomato sauce
- shredded Mozzarella cheese
- salt and pepper to taste
Directions

1Defrost spinach; set aside.

2Take chicken breasts and flatten until thin. Season both sides to taste.

3Place 1 or 2 tablespoons chopped spinach on each breast half.

4Roll up and secure with toothpick.

5Place chicken rolls in nonstick skillet and cook, turning until cooked.

6Place the rest of the spinach in skillet and pour tomato sauce over all.

7Cook 5 or 10 minutes longer. Sprinkle with Mozzarella cheese. Cover until cheese melts.

8Serve over rice.
