- 2 lb. fresh spinach
- 1/2 lb. fresh mushrooms, sliced
- 1/4 c. sunflower seeds
- 4 Tbsp. vegetable oil
- juice of 2 lemons
- 2 Tbsp. Dijon mustard
- 2 Tbsp. Parmesan cheese, freshly grated
- 2 tsp. sugar
Directions

1Combine last five ingredients in a jar with a lid; shake well and chill.

2Thoroughly wash spinach; drain well and tear into bite-size pieces.

3Chill in tight plastic bag to crisp.

4Combine spinach and mushrooms in large bowl; toss with dressing.

5Garnish with sunflower seeds.
