Ingredients
- 4 slice bacon
- 1 small onion
- 4 tbsp mayonaise
- 4 tbsp sugar
- 4 tbsp wine vinegar
- 1 packages spinach (about 16 oz.)
- 2 tbsp flour
Directions

1Fry the bacon to crisp and remove from pan to drain and cool.

2Fry thinly sliced onion in bacon grease until clear.

3Remove onion to cool.

4Add the flour to the bacon fat and blend over low heat.

5In a separate bowl mix mayo, sugar and vinegar until smooth.

6Then add bacon/flour mixture and blend until smooth.

7Put spinach into serving bowl.

8Top with crumbled bacon and onions.

9Pour sauce over top when ready to serve.

10It is quite all right if sauce is still hot.

11May season to taste including adding hot sauce.
