Spinach Salad

Ingredients

  • 4 slice bacon
  • 1 small onion
  • 4 tbsp mayonaise
  • 4 tbsp sugar
  • 4 tbsp wine vinegar
  • 1 packages spinach (about 16 oz.)
  • 2 tbsp flour

Directions

    Fry the bacon to crisp and remove from pan to drain and cool.

    Fry thinly sliced onion in bacon grease until clear.

    Remove onion to cool.

    Add the flour to the bacon fat and blend over low heat.

    In a separate bowl mix mayo, sugar and vinegar until smooth.

    Then add bacon/flour mixture and blend until smooth.

    Put spinach into serving bowl.

    Top with crumbled bacon and onions.

    Pour sauce over top when ready to serve.

    It is quite all right if sauce is still hot.

    May season to taste including adding hot sauce.
