Spinach Salad

Ingredients

  • 2 qt. washed and well drained spinach leaves
  • 1/2 lb. fresh mushrooms
  • 1/2 lb. lean bacon, fried crisp and crumbled
  • 2 hard-cooked eggs, roughly chopped
  • 5 scallions, chopped
  • 3/4 c. homemade or store bought garlic croutons
  • 2 tsp. German or hot mustard
  • 1/2 c. mayonnaise
  • 1/4 c. lemon juice
  • 1/2 c. Italian olive oil
  • 1 Tbsp. tarragon vinegar
  • 1/8 tsp. sugar
  • salt and pepper

Directions

    Tear spinach into bite size bits; place in salad bowl. Arrange crumbled bacon, eggs, scallions and croutons over the spinach and mushrooms.

    Combine all remaining ingredients; mix well.

    Just before serving, or at table, pour dressing over salad and toss lightly.
