  • 1 lb. Italian sausage (casing removed)
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed, drained and lightly squeezed
  • 1 (16 oz.) pkg. Mozzarella cheese
  • 1 c. Ricotta cheese
  • 6 eggs
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 small clove garlic (put through garlic press) or 1/4 tsp. garlic powder
  • 9-inch double pie crust

Directions

    Brown sausage, breaking up meat with a spoon; drain off fat and cool.

    Lightly beat eggs in a large bowl (save 1 tablespoon of egg to brush on top crust).

    Add cheeses, spices, spinach and sausage, mixing until well combined.
