- 10 oz. pkg. frozen spinach
- 2 Tbsp. butter
- 3 eggs
- 2 Tbsp. flour
- 1/4 tsp. pepper
- 1/4 lb. mild Cheddar or American cheese
- 1/4 lb. Brick or Mozzarella cheese
- 1 lb. (2 c.) cottage cheese
- 1/2 tsp. salt
Directions

1Steam or microwave spinach.

2Stir into butter; set aside.

3In large bowl, combine cheeses, flour and seasonings, mixing well. Add beaten eggs and stir until mixed. Stir in spinach.

4Pour into 1 1/2-quart baking dish.

5Bake at 350° for 55 to 60 minutes. Allow to cool for 10 minutes before serving.
