Spinach Souffle

  • 10 oz. pkg. frozen spinach
  • 2 Tbsp. butter
  • 3 eggs
  • 2 Tbsp. flour
  • 1/4 tsp. pepper
  • 1/4 lb. mild Cheddar or American cheese
  • 1/4 lb. Brick or Mozzarella cheese
  • 1 lb. (2 c.) cottage cheese
  • 1/2 tsp. salt

Directions

    Steam or microwave spinach.

    Stir into butter; set aside.

    In large bowl, combine cheeses, flour and seasonings, mixing well. Add beaten eggs and stir until mixed. Stir in spinach.

    Pour into 1 1/2-quart baking dish.

    Bake at 350° for 55 to 60 minutes. Allow to cool for 10 minutes before serving.
