- 2 Tbsp. margarine
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/2 c. skim milk
- 1/2 pkg. frozen chopped spinach, cooked and drained
- 1 Tbsp. finely chopped onion
- 3/4 c. Egg Beaters
Directions

1Melt margarine.

2Blend in flour and salt.

3Cook over low heat; stir until smooth and bubbly.

4Remove from heat and gradually stir in milk.

5Return to heat and bring to boil, stirring constantly. Cook 1 minute.

6Remove from heat.

7Stir in spinach and onion. Beat Egg Beaters; fold in spinach mixture.

8Put in greased casserole.

9Bake at 325° for 50 minutes.
