Spinach Souffle

  • 3 Tbsp. bacon fat
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. milk
  • 1 c. spinach, well drained
  • 1 Tbsp. onion juice
  • 3 eggs, separated
  • 1 tsp. prepared mustard
  • 1 tsp. Worcestershire
  • 1/2 c. grated Cheddar cheese

    Mix fat and blend in flour, salt and pepper.

    Add milk and cook until mixture thickens.

    Chop spinach and press as dry as possible and add to sauce.

    Add beaten egg yolks, mustard, Worcestershire and cheese.

    Beat egg whites until stiff; fold gently into mixture.

    Pile into lightly buttered casserole.

    Place in pan of hot water.

    Bake at 350° for 50 minutes.
