- 3 Tbsp. bacon fat
- 3 Tbsp. flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 c. milk
- 1 c. spinach, well drained
- 1 Tbsp. onion juice
- 3 eggs, separated
- 1 tsp. prepared mustard
- 1 tsp. Worcestershire
- 1/2 c. grated Cheddar cheese
Directions

1Mix fat and blend in flour, salt and pepper.

2Add milk and cook until mixture thickens.

3Chop spinach and press as dry as possible and add to sauce.

4Add beaten egg yolks, mustard, Worcestershire and cheese.

5Beat egg whites until stiff; fold gently into mixture.

6Pile into lightly buttered casserole.

7Place in pan of hot water.

8Bake at 350° for 50 minutes.
