Ingredients
- 2 Tbsp. margarine
- 2 Tbsp. whole wheat flour
- 1/2 c. skim milk
- 1/2 pkg. frozen spinach, drained and chopped
- 1 Tbsp. chopped onion
- 1/4 tsp. nutmeg
- black pepper to taste
- 6 egg whites
- 3 Tbsp. Parmesan cheese
Directions

1In small heavy saucepan melt margarine.

2Blend in flour; cook until mixture is smooth and bubbly.

3Remove from heat and gradually stir in milk.

4Bring to boil for 1 minute; remove from heat.

5Stir in spinach, onion, nutmeg and pepper.

6Beat egg whites until stiff.

7Fold gently into spinach mixture.

8Sprinkle with cheese.

9Pour into 1 3/4-quart casserole dish.

10Bake at 350° for 35 minutes.

11Serve immediately.
