  • 1 c. milk
  • 1 c. spinach, cooked and chopped
  • 1 onion, finely chopped
  • 1/2 c. cheese, grated
  • 4 eggs, separated
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

    Melt butter; stir in flour and gradually add milk until mixture thickens.

    Stir until smooth and slightly cool. Fold stiffly beaten egg whites into mixture.
