- 1 c. milk
- 1 c. spinach, cooked and chopped
- 1 onion, finely chopped
- 1/2 c. cheese, grated
- 4 eggs, separated
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions

1Melt butter; stir in flour and gradually add milk until mixture thickens.

3in cheese and beaten egg yolks.

4Fold in onion

5and spinach.

6Stir until smooth and slightly cool. Fold stiffly beaten egg whites into mixture.

7Bake in buttered casserole at 350°
